Preparation (Desi Chowmein Noodles):

1. Boil the noodles in plenty of water for 3–4 minutes until tender.

2. Drain and rinse lightly under cold water.

3. Heat oil in a wok and stir-fry vegetables such as cabbage, carrots, capsicum and spring onions.

4. Add the cooked noodles along with soy sauce, chilli sauce and seasonings as desired.

5. Toss on high heat for 1–2 minutes and serve hot.
