Preparation (Kashmiri Dum Aloo):

1. Heat oil and fry boiled baby potatoes until lightly golden.

2. In a separate pan, prepare a gravy with yogurt, ginger powder, fennel powder and Kashmiri chilli powder.

3. Add the fried potatoes and simmer for 10–15 minutes.

4. Stir gently until the potatoes absorb the flavours.

5. Garnish with fresh coriander and serve hot with naan or steamed rice.
