Preparation of Fresh Baingan Chhota Gol – Small Round Purple Eggplants:
1. Wash the small round eggplants and make a cross-shaped slit without cutting them apart.
2. Prepare a stuffing with roasted peanut powder, grated coconut, coriander powder, cumin, turmeric, chilli powder and salt, then fill the eggplants.
3. Cook the stuffed eggplants in a little oil over low heat for 15–20 minutes until tender.
4. Serve as traditional Bharli Vangi with chapati, jowar bhakri or steamed rice.
