Preparation of Fresh Safed Baingan Chhota Gol – Small Round White Eggplants:
1. Wash the small white eggplants and make a cross-shaped slit without cutting them apart.
2. Prepare a stuffing with roasted sesame seeds, grated coconut, peanut powder, coriander powder, turmeric and chilli powder, then fill the eggplants.
3. Cook the stuffed eggplants in a little oil over low heat for 15–20 minutes until tender.
4. Serve hot as Ennai Kathirikai with chapati or steamed rice.
