Preparation:
1. Mix 500 g of Palappam Podi with lukewarm water to make a smooth batter and add a little sugar if desired.
2. Allow the batter to ferment for 6–8 hours or overnight in a warm place.
3. Lightly grease an appam pan, pour in one ladle of batter and swirl the pan to spread it thinly around the edges.
4. Cover and cook until the centre is soft and the edges are crisp. Serve with vegetable, egg or chicken curry.
