Preparation of Fresh Haldi – Turmeric:
1. Wash, peel and grate or thinly slice the fresh turmeric roots.
2. Heat oil and sauté mustard seeds, curry leaves and green chillies.
3. Add the turmeric with lemon juice, a pinch of salt and grated ginger, then cook lightly for 2–3 minutes.
4. Serve as traditional Fresh Haldi Sabzi alongside chapati and dal.
