Preparation (Rajma Kali Curry):

1. Soak 1 cup black kidney beans overnight and cook until soft and tender.

2. Heat oil and sauté onions, tomatoes, ginger and garlic until aromatic.

3. Add turmeric powder, chilli powder, coriander powder and garam masala.

4. Add the cooked beans and simmer for 15 minutes until the gravy thickens.

5. Garnish with fresh coriander leaves and serve hot with rice or chapati.
