Preparation (Rajma Curry):

1. Soak 1 cup peeled beans overnight and cook until soft.

2. Heat oil and sauté onions, tomatoes, ginger and garlic until fragrant.

3. Add turmeric powder, chilli powder, coriander powder and salt.

4. Add the cooked beans and simmer for 10–15 minutes.

5. Garnish with fresh coriander leaves and serve hot with rice or chapati.
