Preparation:

1. Soak 2 cups of Idli Rice and 1 cup of urad dal separately for 4–6 hours.

2. Grind both into a smooth batter and add salt to taste.

3. Allow the batter to ferment overnight until light and airy.

4. Steam in idli moulds for 10–12 minutes and serve with chutney and sambar.
